Cinco de Mayo 2015 : Guacamole Recipe
Yesterday was Cinco de Mayo, did you eat anything yummy? Normally I like to make a new recipe each year, but I already had all the fixings for chicken quesadillas in the fridge, so this year is a bit of a repeat. I shared my quesadilla recipe last year, so I figured I'd share my homemade guacamole this time around.

This is a recipe I have been making since 2009. I originally whipped these up for an Art Students League bake-sale, and they were such a hit that I've been making them every year since. I think I might have been the first person to make Irish Potato themed cupcakes and post them to the web, since I couldn't find any other recipe for these online in 2009, but I could be wrong.

Pumpkin Spice Swirl Bread Pudding- Recipe
Even though the Pumpkin Swirl Bread from Pepperidge Farm was a lot thinner than I expected, I decided to go ahead and try to make bread pudding with it any way. Thankfully, it still turned out pretty good!

Sushi Bowl Teaser Post
Feel like you can never get enough sushi? Neither can I, so I made giant sushi style rice bowls with my boyfriend and the results were delicious!
If you follow me on instagram this dish might look familiar, basically I wanted to see if I could make something simple to satisfy my sushi cravings at home, and I did!
I plan on making this again in the near future, and when I do I'll have my proper photo set-up near by, but these are the only pictures I have of the original recipe-test-run.

Happy Saint Patrick's Day everyone!
This is a recipe I have been making since 2009. I originally whipped these up for an Art Students League bake-sale, and they were such a hit that I've been making them every year since. I think I might have been the first person to make Irish Potato themed cupcakes and post them to the web, since I couldn't find any other recipe for these online in 2009, but I could be wrong. Anyway, there seem to be a few variations out there now, but mine is still a bit different.

Making my own Kyubey Curry
Today's post is a little bit special (and nerdy). A few days ago I came across THIS POST about a Madoka Magica themed cafe in Japan. (If you follow me on Instagram, you got a little sneak peak of this last night.)My boyfriend introduced me to the Madoka Magica series a few years ago, and at first I thought it was a silly moe-blob kind of show. I was pretty disinterested...until episode 3. No spoilers, but after that episode I fell in love with Charlotte the witch and all of the collage-styled art used for witch sequences. (I seem to deviate from Charlotte's traditional fans, instead of liking her adorable dolly form, I love her crazy eye'd snake form.)
Anyway, anime themed cafes are typical in Japan, but they are not permanent fixtures. Pop-up anime cafes are a great way to promote new a series or movie, so they usually attract a lot of fans and they don't last for very long. The one featured in this post was from 2011, so I'm sure these menu items are long gone by now.
Since there is no way for me to buy any of these Madoka menu items, I decided that I wanted to make my own here in the states. I started things off with the Kyubey Curry!

Chicken Quesadillas - Recipe
They are super simple, yummy, and a great way to use up left over chicken and veggies. (It's a great way to use up little bits of leftover meats and veggies in the fridge. I made one last night using leftover turkey, corn, and other veggies from Thanksgiving.)
For the record, traditional quesadillas are made using one tortilla folded in half, similar to an omelet, but mine uses two whole tortillas to make one large round order that can be cut into fourths. I find this to be easier when serving this dish as an appetizer or a meal.

Fig & Goat Cheese Pizza
Remember this pizza dough recipe?
I whipped up a double batch of dough earlier today andtook a naplet it rise for three and a half hours. The crust turned out even better than last time! The final results were much lighter, similar to a delivery style pizza crust, but it didn't lose it's crispiness.
My mom's boyfriend, who I call my kinda-sorta-step-dad, has this huge fig tree in his yard. Every fall I get a TON of figs and now that fig season is back I am trying to figure out different things to do with them.
This time I made a fancy, appetizer-style, pizza.

Bruschetta-ish Appetizer - Recipe
Recently I was looking into different ways to preserve fresh baked breads. I love having it on hand but I never seem to use it all before it gets stale (or in some cases moldy).
I found THIS POST about slicing the bread up, wrapping it in tin foil, and putting it in the freezer. I was a little skeptical, I don’t want bread that tastes like freezer burn, but I gave it a try anyway. I took a fresh baked French baguette that I bought at Sam’s Club, sliced it in half (sandwich style), wrapped it in foil, and tossed it in the freezer.
Guess what?
It worked!
I took the bread out over a week later and let it thaw. The final product lost it’s crusty outside, but it tasted fresh baked. (Even the crustiness returned after a few minutes in the toaster oven.)
Now what will I do with it?

Banana Choco Frozen Yogurt - Homemade Recipe
We’ve had an ice cream maker for a while, another Aldi special buy, but we have never used it.
I had some overripe bananas, banana candies, and plain yogurt, so why not try to make some fro yo?
Since this was my first attempt I won’t write up a full recipe, but I will tell you what’s in it.
Ingredients:
This was my first time using the machine and it’s pretty easy. I look forward to making more frozen treats!
- 2 cups of plain yogurt
- 3 overripe bananas cut into little slices
- 2 tablespoons of honey
- 1 teaspoon cinnamon
- 1/4th a cup Chopped semi sweet chocolate chips
- A few Banana Choco candies broken up into bits (About 12 candies)

My boyfriend and I attended Zelda Symphony of the Goddesses tonight, so I made this cake to celebrate.
This was my first time making marshmallow fondant, and it came together very easily. I will say that working with it was almost a nightmare. It was very sticky and difficult to cut, plus the colors started to bleed into my white cake icing. It tasted much better than fondants I have used in the past, but I wouldn’t recommend it for 8-bit figures.
Although my little cake is a little wonky, it was pretty damn tasty.

This is my version of a drink you can buy in Chinatown, PA. It is a (really) simple recipe that is great for the summer.
Iced Honey Lemon
~ A simple and refreshing drink for summer ~
All you need is:
- 2 Tablespoons of honey
- The juice of 1 large lemon
- A little bit of boiling water (enough to dissolve your honey.)
- 5 cups of cold water

Okay, I fell in love with the pizza dough recipe I reviewed yesterday, so I made another batch. It was just so delicious AND easy! I may have a pizza addiction. (And by “may,” I mean I totally do. And by “problem,” I mean don’t judge me.)
I used the same pizza dough recipe to make the base of these garlic sticks. Lauren, the original recipe writer, also has a cheesy garlic stick recipe, but I kind of made my own so I could use up more stuff I had in the fridge.

Strawberry Grapefruit Syrup -Homemade, Recipe
I’m trying to use up a lot of the things in my fridge this week, so I used a couple strawberries and a grapefruit to made this syrup. It’s really delicious over ice cream, but I bet it’d be great on waffles and pancakes too!
Ingredients:
- 1/4 cup brown sugar
- 1/4 cup water
- 8 large strawberries
- Juice from 1/2 a grapefruit
In a small pot, combine the sugar and water. Place it over low heat, stirring occasionally. This will create a simple syrup to act as our sweetener and our base.

My Version of General Tso’s Sauce - ~MY OWN RECIPE~
General Tso’s chicken is a staple at every Chinese food restaurant, but each one does it differently. Sometimes it comes with a brown sauce, and other times it’s a tangy red.
I wanted to make the tangy red at home, but none of the recipes I found were quite right. They were all brown and savory! After seeing a comment online about the red sauce using ketchup, I tried a few different combinations, and this is what I came up with!
It’s tangy, spicy, and delicious with rice and broccoli.
