PF Chang's Style Chicken Lettuce Wraps - Pinterest Recipe Review : The PIN The RECIPE
Instead of spending Valentine's Day at a restaurant, or exchanging gifts, I wanted to stay in, make yummy food, and watch Netflix with my boyfriend. I'm a homebody(a nice way to say hermit), and my favorite date nights are the ones where we stay in, spend quality time together, and cook for ourselves.
I may have wanted a low-key kind of night, but I still wanted to make something fancy for dinner. Like most Pinterest users, I have a HUGE board filled with recipes, so I figured the best thing to do was for each of us to pick one for our Valentine's Day dinner.

- I chose these PF Chang's Style Chicken Lettuce Wraps
I picked up the ingredients for both recipes before heading over to his place Friday night, which was a terrible idea. I know the grocery store rule of thumb is to avoid shopping on holidays, but I never expected Valentine's Day would cause such chaos. It was absolutely insane! Thank goodness I didn't have to go down the baking aisle. Lesson learned. Avoid the grocery store on EVERY holiday EVER. (If any of you work at a grocery store, you deserve a medal for every holiday you survive.)
The ingredients were really easy to find at my local Wegman's, although I am sure all Asian grocery shops would have everything as well. (I lucked out, I actually had more than half of these ingredients in my pantry already, since I have made Katsu-don and General Tso's chicken in the past.)
I followed the recipe exactly, no modifications (gasp!), and everything came together very quickly. All of the chopping (chicken, onion, and water chestnuts) was a bit time consuming, but still extremely easy.
In the end, my recipe choice wasn't the most photogenic, but it was delicious and addicting.
The filling is sweet, savory, and a little bit spicy which goes very nicely with the fresh lettuce leaves. You may need to tweak things here and there for your personal tastes, but I found the the recipe was perfect as is. (Which is really rare for me. I tend to modify everything.)
Out of the four recipes I made this weekend, this was my favorite. I highly recommend it!

I was at my boyfriend's place all weekend and I didn't have my camera or lighting equipment, so I had to make due with my Galaxy S4. (Which isn't absolutely horrible quality, but I prefer using real cameras.)
